shrimp cocktail


Shrimp cooking:
-500 gr raw shrimp
-1 piece of white onion
-1 garlic clove, peeled
-Boiling water, as needed

-½ cup Star Value® Ketchup
-½ cup Pacific Mix Clam®
-1 tablespoon La Botanera® Classic Sauce
-1 red tomato, chopped (¾ cup)
-½ cucumber, diced (¾ cup)
-2 tablespoons red onion, chopped
-2 tablespoons cilantro or to taste
-Mega limón® to taste
-Salt and pepper, to taste


Shrimp cooking:
Peel and devein the shrimp. If you prefer to buy or use already cleaned or cooked shrimp, check the recipe notes for the amount of shrimp to use.
Cook the cleaned shrimp in boiling water with onion and garlic. Cook for a few seconds or until they are pink and have curled. Do not overcook, remove from water, strain and cool with water. Reserve 1 cup of the cooking water or now shrimp cooking broth.
Mix in a bowl or container the Star Value® ketchup, Pacific Mix Clam or the same amount of shrimp cooking broth, La Botanera® Classic sauce, Mega limón® to taste and season to taste with salt and pepper.
Add the shrimp, tomato, cucumber, red onion, cilantro and mix well. If you prefer it more brothy, add more Pacific Mix Clam or shrimp cooking broth to taste.
Let stand 15 minutes in the refrigerator.
Serve with crackers and garnish with diced avocado. I served with more lime, hot sauce and a cold beer.
